"Hunt in the kitchen" has now reached its fourteenth edition: these are the seven days dedicated in Lombardy to hunting gastronomy and promoted since the beginning by Delegation CIC Italy, the International Council for Hunting and Wildlife Conservation. The inaugural event dates back to last February 22nd. There Garden Society in Milan hosted a rich and varied menu: it began with a very rich buffet embellished with typical Lombardy cold cuts and cheeses, with the ideal accompaniment represented by pate and marbrè of game. The chefs of the "Da Vittorio" restaurant have guaranteed the quality and freshness of all these dishes.
The inaugural event allowed attendees to savor too the mallard and the roe deer, prepared with Bergamo paccheri and polenta, other refined and tasty delights. Red wines and sparkling wines were matched equally effectively. Many were the locals who decided to join throughout the region, not only renowned restaurants but also agritourisms and trattorias and the program was defined until next March 20 by the Merchants and Merchants Association of the Province of Bergamo (ASCOM). The objective of this edition, once again, is to enhance the food linked to the traditions of local cuisine as much as possible.
The success that “Caccia in the kitchen” is achieving in these first days is the testimony of the fact that we want to fully rediscover game-based preparations, with an audience that is not represented exclusively by hunters: on the other hand, even the most famous TV chefs are showing a strong interest in game on the table, with increasingly sophisticated recipes. This rediscovery is judged positively, in particular because the game itself is a healthy product of the earth like all those that can be found in Italian tables, it also allows you not to forget the typical flavors of peasant origins, without forgetting the awareness of the importance of wildlife for that concerning the resources of rural economies, to be reborn through the kitchen.
The “Hunting in the kitchen” week ended on 28 February last, but several Lombard provinces have decided to add other dates, as is often the case for this local program. The official conclusion of the event will instead be entrusted to lunch on Sunday 6 March at the “Aquila d'oro” restaurant in Brescia: the provincial ANUU organized everything, confirming its interest in the initiative, now no longer a bet as when it was launched fourteen years ago.
