Thanks to his organoleptic qualities, to taste and sustainability from all points of view, game at the table it is increasingly appreciated by the general public and the preparation of dishes that see it as a protagonist in public catering is found with increasing frequency even outside the traditionally suited areas. To this growing appreciation, he undoubtedly also contributed a careful promotion work by various representatives of the hunting world (see for example the "Wild and Good" initiative of the UNA Foundation in which Federcaccia actively participated, in particular with the provincial section of Bergamo), accompanied by the significant increase in numbers of certain populations of wild animals, in particular of ungulates, and in certain times of the year there availability of small furred and feathered game meats.
The spread of game meat consumption outside the strictly familiar contexts of practitioners has undoubted returns in terms of society's image and acceptance of hunting and hunters. Against this background of game meat availability, shot down while hunting or as part of containment plans, and requests from consumers and restaurateurs, the Ministry of Health, through the agreement between the Government, the Regions and Autonomous Provinces of Trento and Bolzano signed on March 25th, it defined new national guidelines on the hygiene of wild game meat. These guidelines have the purpose of harmonizing the indications relating to the hygiene of the production of wild game meat, as defined in points 1 and 5 of Annex I of the Regulation (EC) No. 853/2004 as well as the related official control activities on the national territory. In general, killed wild game and / or meat can be used for:
• consumption by the hunter or the assignee of the culled chief in a Control Plan;
• placing on the market as a direct supply of small quantities by the wild game hunter to the final consumer or to a local retailer;
• placing on the market for the purposes of marketing through a recognized establishment.
These new guidelines will have to be implemented at the level of each individual region in order to be operational and promptly adapt to local realities. In any case, they identify the figures, structures and methods to be able to supply or market wild game meat killed during hunting or wildlife control.
