In-depth and multidimensional exploration
In Tombolo (PD), the first Masterclass “Wild and Good at the Table” took place today, the training course born from the recent collaboration between Fondazione UNA – Uomo, Natura, Ambiente and MEatSchool Academy, which offered an in-depth and multidimensional exploration into the world of wild meats to food industry professionals and enthusiasts, with the aim of combining knowledge, sustainability and valorization of natural resources. The initiative is part of the broader strategic framework of Fondazione UNA, which has always been committed with the Selvatici e Buoni project to promoting the development of a controlled, legal and safe supply chain of wild meats, spread throughout the country. Through awareness-raising and training activities, in fact, the Foundation aims to bring out the economic and social potential of the supply chain, as well as to valorize the healthiness and organoleptic properties of these meats.
The Masterclass took place through an integrated approach that explored the multiple dimensions of the supply chain, recounting the journey of wild meats from the forest to the table. Thanks to the contribution of Dr. Luca Pellicioli, Advisor to the Scientific Committee of Fondazione UNA and the partners of Gusto Selvatico APS, participants were able to delve into topics ranging from wildlife management and current regulations to first processing techniques, to conclude with a sensory tasting. An experience that made it possible to transform theory into practice.
An important resource
“The Masterclass Selvatici e Buoni a tavola is part of the broader Selvatici e Buoni project, through which we are outlining a process that allows the creation of a controlled, legal and safe wild meat supply chain from a health and hygiene point of view, capable of guaranteeing sustainable development and a social, economic and employment return for communities” commented Marina Berlinghieri, Head of Institutional Relations of Fondazione UNA – “Our commitment is aimed at making this project increasingly concrete, collaborating with entities throughout the country and having particular sensitivity for the areas in which game can represent an important resource”. The event took place thanks to the collaboration with MEatSCHOOL Academy, a school of (in)formation on the culture of meat in Tombolo, in the province of Padua, born with the aim of transforming the passion for meat into extraordinary skills for those who work or want to work in the sector, combining professional training and in-depth information, to promote the culture of meat in every phase of the production chain.
Shared path
“We are extremely satisfied with the work carried out so far in synergy with the UNA Foundation, with which we share the goal of promoting an increasingly virtuous and aware meat supply chain,” said Paolo Amedeo Garofalo, Director of the MEatSCHOOL Academy – “For us, training, sustainability and product valorization represent three essential pillars to accompany the evolution of the sector and promote an increasingly responsible food culture.” This Masterclass marks a new step in the path shared by the UNA Foundation and the MEatSCHOOL Academy, confirming how knowledge can concretely contribute to valorizing natural resources and promoting responsible production practices.
