A very current challenge
Knowing how to properly manage natural resources without causing damage to the territory is a very current challenge and perhaps represents the only sustainable practice capable of giving new impetus to the socio-economic development of rural areas. The wealth of the territories from a productive-economic point of view resides, in fact, almost exclusively in the environment as an essential and characterizing element not only of the territory, but also of the traditions and customs of those who live there. One of the main objectives is to develop, in compliance with food safety, the operating methods for the correct hygienic-sanitary management of the supply chain of big game meats allowing the valorization of a product with important nutritional characteristics and its promotion in the territory by affirming a development model of mountain areas capable of combining environmental and socio-economic needs.
The development of the supply chain
With this aim, on the initiative of ANUUMigratoristi, “Caccia in cucina” was born twenty years ago to enhance the gastronomic hunting traditions of the territories and develop the aspect of the game meat supply chain. The latter, if treated correctly, represents an excellent resource from both a gastronomic and nutritional point of view. Its peculiar flavours must be enhanced, through the creation of innovative dishes and avoiding, when possible, long and “aggressive” cooking as well as the traditional and prolonged marinades in wine or vinegar. Game meat is everyone's heritage, but above all a unique, characteristic and cultural heritage of the individual territory: why not imagine a geographical map based on the food and wine-hunting dishes?
Tasty recipes
Bergamo with polenta and osei, Brescia with the spit: identity dishes that often evoke family memories and moments of conviviality, which now have official recognition and which perpetuate a centuries-old wisdom. And then the hare, roe deer or deer salmi depending on the plain or mountain areas, up to the new gourmet dishes of modern chefs that are becoming popular in restaurants all over the world. The event is dedicated to these game dishes, which allow you to experience nutritional values in line with our Mediterranean supply chain, for healthy and good cuisine. With this approach, on Saturday 15 March (at 12,30:XNUMX) we will renew this tradition with the final stop at the Aquila d'Oro Restaurant in Ospitaletto (BS), which includes a rich menu with game and much more, in the company of excellent wines, which will be tasted in an atmosphere of cordial conviviality.
