La spring it is getting closer and closer and with the arrival of summer the table is filled with good and colorful products. Between vegetable that stand out this season, hard to resist Fava beans. The bright green and the delicate but unmistakable taste are enriched even more when combined with the strong flavor of pecorino cheese. To make the most classic of combinations innovative, why not associate it with game? An idea in this sense comes to us from Franchi Food Academy. The chef Roberto Dormicchi, suggests skewers of chamois with broad beans and pecorino. Let's see the ingredients and the procedure together.
Ingredients
4 chamois skewers
300 gr fresh broad beans
100 gr pecorino cheese
1 file
to taste ginger
to taste flavored breadcrumbs (sage, thyme, garlic, salt and pepper)
to taste extra virgin olive oil
Method
The first thing to do is clean the beans. Although it is a long and sometimes boring process, the taste and goodness of fresh beans is unmatched. However, you don't always have enough time to devote yourself to cooking. For this reason, if you don't want to give up a delicious dish, the alternative can be to use frozen broad beans.
Once ready, all that remains is to wash and dry them. In a bowl, prepare the flavored breadcrumbs. To give boost and flavor to the breading, you can enrich them with seasonal and non-seasonal aromas. A perfect mix is to add thyme, sage, salt, pepper and if you like even a little bit of Chili pepper to give it an edge.
After flavoring the bread, arrange the le on a plate Fava beans e sprinkle them with the mix previously prepared.
Now it's time to prepare the skewers. Take one chamois thigh and bone it. If you are not very experienced, you can ask the butcher or choose another cut. Cut to diced the meat. To make it even better and give it an extra touch, you can aromatize it. In this case you can opt for the lime, with a strong but more delicate taste than lemon, with the fresh ginger grated, which releases a light spicy aroma. After 10 minutes, the meat will be sufficiently flavored to be placed on the wooden stick.
Once ready it skewer, all that remains is cook it. For cooking you can choose one non-stick pan or grill. Both must be heated a live fire. When it reaches the right temperature, cook the chamois meat.
While the skewers are cooking, in a platter arrange the Fava beans breaded. Once cooked, lay the meat on legumes. To complete the dish and make it even tastier, you just need to sprinkle with pecorino in flakes and complete it with extra virgin olive oil.
