Il Regional Reference Center for Veterinary Urban Hygiene (CRIUV), the Federico II University of Naples, the Experimental Zooprophylactic Institute of Southern Italy and the Coordination of the Salernitane Hunting Associations have organized a very interesting initiative. This is de "The management of wild boars through the path of the trained hunter", a course that will be officially inaugurated on 18 July at 15 pm Eboli (in the province of Salerno precisely).
The location chosen for this first day is the “Improsta” Regional Experimental Farm. The project was born from the desire to deepen the notions on pathologies, production and treatment of game and its meat, in order to guarantee the final consumer a safe product after hunting. Food hygiene and safety are goals that the hunting world must also aspire to.
That is why the hunters will have to be well trained on the correct behavior to follow and on the treatment of food. Among other things, wild boar meat is excellent from a nutritional and organoleptic point of view: moreover, it is in great demand by restaurants and agritourisms and consumers appreciate it a lot. The scientific managers of the training project are Professor Alessandro Fioretti, Doctor Vincenzo Caputo and Doctor Achille Guarino, while the coordinator of the project is Professor Vincenzo Veneziano (Department of Veterinary Medicine and Animal Production).
