Street food par excellence
Franchi Food Academy always knows how to offer delicious dishes, as demonstrated by a simple but tasty recipe, a reinterpretation of a classic street food from the Marche region. The stuffed olives, but made with wild boar, are perfect for any aperitif. Their filling can be made with the meat you prefer, so wild boar gives an extra boost to the flavour.
The ingredients to use
Chef Michael Hunter proposed them in a tasty and tasty version. These are the ingredients:
150 g minced wild boar meat
20 green olives
10 gr grated Parmesan cheese
2 beaten eggs
130 gr flour
130 g breadcrumbs
1 l seed oil
nutmeg to taste
to taste ground chilli pepper
salt and pepper to taste
lemon and fried herbs to taste
Preparation in detail
The procedure is easy to explain. For the olive filling, mix meat, parmesan, salt, pepper, chilli and nutmeg. Cut the olives and stuff them with the filling. Dip them in the flour then in the egg and finally in the breadcrumbs. In a pan, heat the oil to 175°, once ready, immerse the breaded olives in it then fry them until they are golden (source: Franchi Food Academy).
