A new recipe to discover
Two decisive and intense flavors which, united together, can only give a show. We are talking about wild boar meat and beer, the two main ingredients of the game recipe that we offer you today on the website of Franchi Food Academy. The wild boar ossobuco with beer is a second course of great effect and with guaranteed results.
Ingredients
8 wild boar shanks
750ml beer
2 white onions
2 cloves of garlic
2 carrots
2 apples
60 gr butter
3 sweet potatoes
juniper berries to taste
rosemary to taste
cloves to taste
flour to taste
EVO oil to taste, salt and pepper
Preparation
Clean the onions and carrots, setting aside some for the broth and some for the meat. Clean the sweet potatoes, reserving them for the side dish. Put the wild boar shanks in a bowl with the beer, the apples, the carrots, the garlic, a pinch of salt, the juniper berries and a sprig of rosemary; leave to flavor for one night. Prepare a classic broth with carrots and onions, beef bones and cloves, let it simmer for about 60'. Drain and flour the meat, place it in a saucepan with oil and butter. As soon as it is browned, add the diced onions and carrots, deglaze with the beer and continue cooking, adding the meat stock. Cook the sweet potatoes in the microwave, pricking them with a toothpick and covering them with plastic wrap; let them cook for 10'. Once cooked, make a puree. Assemble the dish, placing the sweet potato purée, a few small vegetables and the wild boar shanks with their sauce on the base.
