A constructive dialogue
In the context of the training initiatives envisaged by the institutional tasks of the Veterinary Service, Area B, theLocal health authority of Biella wanted to spread and standardize knowledge on the sector through transversal skills, comparing the hunting world and the local production world (restaurateurs and processors of products of animal origin) in a constructive dialogue on quality and the territory, drawing from the territory a opportunities for development and growth. An interesting conference will be held on Thursday 18 April 2024 from 14,30 pm to 19,00 pm in the Council Room at the Palazzo della Provincia di Biella.
Meat consumption
In the Biella area there is a growing number of trichinoscopic tests aimed at detecting the possible presence of the Trichinella parasite, transmissible to humans through food, through the consumption of raw or undercooked meat of the swine species (pigs, wild pigs, wild boars). . Given this increase in analyzes carried out, there is no structure authorized for the production and marketing of such meat in the Biella area. Therefore, to date, only self-consumption is assumed, i.e. consumption within the family by the hunter and his relatives, however in terms of volumes which have become very important over time.
Operators to be trained
The Veterinary Services of the Health Authorities are required by law to also supervise this supply chain, which must be subject to monitoring and adequate training of operators in the territories of competence, so that existing consumption occurs in full compliance with food safety.
