Aspects already regulated
The regional council of Tuscany has implemented the agreement between the Government, Regions and Autonomous Provinces of March 2021 on the hygiene of wild game meat. In fact, the new guidelines intervene on aspects already regulated in the past years by regional resolutions, which have therefore been modified to introduce new directives on the marketing of the meat itself.

Among the innovations introduced by the latest resolution is the strengthening of courses aimed at hunters, operators in the wildlife sector and police forces, who request them, on the hygienic management of meat, the updating of the methods of supplying small quantities of game or meat from the hunter to the consumer and the enhancement and strengthening of the Game Collection Centre, an important structure in guaranteeing the health monitoring of meat and therefore public health.
"The transposition of the new guidelines and the approval of the regional document, in collaboration with the agro-food councilorship - explains the councilor for the right to health, Simone Bezzini -, is the natural continuation of a process of guarantee and implementation of food safety standards, which our Region has already undertaken for several years. It serves to protect the final consumer, from a health and traceability point of view, but it also offers the opportunity to valorise wild game meat within its specific supply chain” (source: Tuscany Region).
