A memorandum of understanding was signed this afternoon at Palazzo Lombardia between the Region, the Una Foundation and the universities of Milan and Pollenzo aimed at enhancing the supply chain of game meat in Lombardy. Scientific studies, training courses and health prevention activities will be carried out and young people interested in developing businesses in an area that represents a fundamental environmental protection in some areas of Lombardy will be involved. “Often the wildlife represents a problem for the safety of people. We want to solve this problem by transforming it into an opportunity.
Game meat is still underestimated and developing a project with scientific partners means spreading a new culture also in terms of food ”declared Fabio Rolfi, Councilor for Agriculture, Food and Green Systems of the Lombardy Region. “Make people talk the whole supply chain it is essential for greater food safety, better product communication and the creation of an important employment sector. I remember that thanks to the new Lombard law on agritourisms, game meat is considered as product of the territory".
"We are honored to be present today in the Lombardy Region for the signing of a Memorandum of Understanding between the promoters of the Project "WILD AND GOOD: a food chain to be enhanced" and the Lombardy Region which allows the extension of the same in other regional areas - commented Maurizio Zipponi, President of the UNA Foundation (Man, Nature, Environment) - This protocol is for us a confirmation that the Project has been particularly appreciated and allows us to develop operational methods also at a regional level for the management of the large game meat supply chain "from the forest to the table", through training activities, education in the use of resources, improvement of the hygienic and health characteristics, characterization and enhancement of the product up to promotion in the territory ".
The "Wild and good" project is proposed by the UNA Onlus Foundation and byUniversity of Gastronomic Sciences of Pollenzo, in collaboration with the Department of Veterinary Medicine of the University of Milan and the Italian Society of Preventive Veterinary Medicine. On the basis of census data, a sustainable supply chain will be promoted in order to maintain the environmental balance and a correct relationship with agricultural activities. A population survey will be carried out to acquire data on the levels of risk of exposure to pathogens. The project also provides for the implementation of training activities for hunters and operators in the processing chain to develop knowledge and skills for the correct management of hunted animals. For consumer protection, traceability and food safety become the central points to ensure transparency and legality. A mapping of the traditions linked to the artisanal productions inherent to game will be carried out, to contextualize the use of game within a specific territory.
Training moments will then be defined which will involve all the operators of the game supply chain, with a view to exchange where the restaurateur will explain what his needs are in order to create a dish, the butcher and the butcher will give their opinion on how to obtain a certain product and the hunter will explain what the criticalities of a given process may be with respect to his role. In this way we will try to achieve those synergies necessary to create an integrated supply chain. We will then proceed to the identification of young people willing to launch start-ups capable of generating an employment impact linked to the transformation of the product. This will facilitate the creation of new companies in a perspective of enhancement of the territories often subject to abandonment, eliminating the problems related to the treatment of food products. The study of an effective communication model usable by restaurateurs will also be addressed, with the clear intention of enhancing the raw material.
