Since 2012 the hunters of the Province of Genoa have been able to sell the meat of ungulates (wild boar, roe deer, fallow deer) killed but according to the due procedures.
In the province of Genoa, hunters have been able to sell the meat of animals killed (wild boar, roe deer, fallow deer) as early as December 2010, when a resolution of the regional council issued guidelines that dictated the rules for selecting marketable carcasses, slaughtering and selling them.
That resolution was the result of a long process initiated and also promoted by the Province of Genoa, which first participated in working groups with numerous other subjects (health and hunting offices of the Region, Asl, Atc, hunting associations, agricultural associations, Experimental Zooprophylactic Institute of Liguria, Piedmont and Val d'Aosta, Nas), then promoted two training courses held by Federcaccia and Urca (Regional Union of Hunters of the Apennines) and finally published a handbook containing all the useful information for hunters on this subject.
Among the rules and prescriptions contained in the regional guidelines and reported in the vademecum of the Province of Genoa there are:
- the ban on the marketing of dead wildlife not coming from farms for festivals and gastronomic events;
- permission to market game only to hunters who have passed the training courses recognized by the ASL and organized by the ATC and hunting associations, or to hunters belonging to wild boar hunting teams in which there is at least one trained component to be subjected to the examination of the item to be sold;
- the prescription to sell the heads of whole ungulates, without stomach and eviscerated according to good hunting practices;
- the limitation to a single large head for the marketing of wild boar, roe deer and fallow deer.
