Discovering Italian artisan cutlery with Daniele Tonelli: a journey through steel, passion and tradition, alongside selector Alan Risolo.

Artisan CutleryToday I accompanied my friend Alan Risolo to collect a knife that he had made for himself Daniel Tonelli, an craftsman of the “blades” who, with commitment and passion, cultivates the art of Italian cutlery. I took advantage of the opportunity because I had wanted to delve deeper into the aspects of this fascinating world for some time. commercial knives they give a quick and, certainly, adequate response to one's request work tool, but a handmade knife gives some greater guarantees, in terms of quality of work e choice of materials, in addition to having a exclusive charm. Alan, for his work on Veterinarian and professional selector, asked Daniele to make a knife with the blade drawn on a model skinner, to be used mostly for the Skinning and cutting of carcassesa strong steel to stress and that kept the thread during the preparation activities of the slaughtered animals, as well as with aergonomic handle for a firm grip on the hand while working.

Once you reach your destination, the entrance to theworkshop is a portal to a completely different world. As soon as you cross the threshold, you are greeted by a enveloping warmth, generated not only by the fire of the forge, but also from a common that animates Daniele's heart for his profession. The walls are covered with ancient tools and old sharpening stones, each with a story to tell. The counters are dotted with specialized tools: hammers, pliers, lime, sandpaper e measuring instruments.

Each tool has its own purpose and importance in the creation process. On the walls, shelves hold a myriad of materials: natural wood and synthetic materials for the handles, steel for the blades , and leather for the sheaths . But technology is not lacking: inserted into an ancient context, a modern computer makes its appearance , used to create the graphic models that will then be shaped by the skilled hands of the craftsman.

We ask Daniele how this passion was born and, surprisingly, he tells us that it started from self-taught, discovering askill and dedication in giving shape to metals. He has perfected and shared this path of cutler with Nico Cremona, which would later become not only the art master, also an Dear friend with which he still creates many today creative projects. artisan cutlery


Q: You have been making knives for many years now, and based on your experience, what characteristics do you think a knife must have to be defined as “perfect”?
R: “My goal is to find the best pairings aimed at the purpose: a hunting knife must have different characteristics from one another kitchen or from a foldable, and even within each category there are various purposes of use. The perfect knife It must certainly be functional, but also captivating in aesthetics and have one quality blade and a great grip. For this reason i handcrafted knives they offer one unique quality and completeness, fruit of the continuous research, the exchange of information and direct experimentation. "


Q: But how is an instrument with such characteristics created?
R: “I work starting from the digital design in 2D and 3D, I choose the type of steel, each with specific properties, and I vary the hardness (HRC) depending on usage, with a dedicated heat treatment. Once the steel is established, I select the thickness and I study them geometry andchamfer angle, seeking the right balance between thread holding e Blade resistance. Finally, I move on to the handle, which can be in stabilized wood, horn o synthetic material, designed to offer grip and comfort. Each material has its own pros and cons: the synthetic has more grip and resistance, wood has beauty and uniqueness. "


Q: So there are many steels that you use, but what can you tell us about the blade manufacturing process?
R: “I work successfully thedamascus steel: a technique of forging and welding of different steels that generates a visible pattern after theetching. The result is a material composite with alternating alloys. Today I also use the Damasteel, an Stainless Damascus Steel ad very high performance. "


Q: How long does it take to make a perfect knife?
R: “Each step requires working hours e maximum concentration. Some errors are irremediable. The handcrafted knives can have small defects, but it is precisely these that make them unique and special. For me it's a immense satisfaction transform raw materials into an object beautiful, functional and durable. But the greatest gratification is knowing that, even after years, my knife still comes used with satisfaction. "


During our conversation, I "seized" Alan's knife and realized that, as Daniele responded, I had direct feedback on what he was saying and I could sense the passion he had put into his creation. Leaving the workshop was like coming back to reality . Because Daniele is not just a knife maker: he is a custodian of an ancient art , an ambassador of traditions that risk being forgotten. And through his work, as well as that of many Italian artisans , the fire of creativity and manual skill is kept alive , with the hope that new generations will take up this cultural legacy.
