This year is the first edition of the gastronomic festival "Knowledge and Flavors" which comes with a new and captivating formula. As reported by the Gambero Rosso website, in fact, it will take place 17 from October to 19 next to Atman restaurant in Villa Rospigliosi in Lamporecchio, in the province of Pistoia. The event conceived by chef Igles Corelli twenty-seven years ago will have as its theme "The wild saves you: in the kitchen, in the fields, in the woods, in the rivers and in the seas".
Simply put, well 15 starred chefs they will be busy cooking every night game based recipes with a five-course menu. What will it be possible to taste specifically? Monday 17 will be the turn of Mauro Uliassi and Peter Brunel with the pregnant wild boar paired with a Chianti of 2009. Philippe Léveillé will propose instead confit of duck leg with honey, traditional balsamic vinegar and Magadascar pepper. Aurora Mazzucchelli's proposal, that is to say, is also very interesting "The hare and the grapes".
On Tuesday 18th Stefano Baiocco will enter the scene with a porcini tiramisu, but also Fabrizia Meroi with his typical potato ravioli with chamois and Alessandro Gravagna with "Deer, Isonzo trout and pistachio".
