A novelty in the catering sector that cannot leave you indifferent. As reported by the site Lacucinaitaliana.it, Milano a restaurant is about to open its doors where it will be cooked and served game hunted exclusively in our country. The area chosen is that of the Navigli, to be precise via Savona: the name, very likely but not yet official, should be "Heart of the Navigli". The site also reported the words of Maurizio Donelli, managing editor at Corriere della Sera and project consultant.
The chef chosen for the debut will be Roberto Longa, considered by Donelli himself the right person for the Milanese club after the proposal of a sirloin of venison, who impressed the journalist with the rapid cooking in a pan, the use of mustard, honey and polenta flour. The menu offered must be decided, however one is thinking of a lunch based on burgers, tartare and sandwiches, and a dinner with more structured dishes.
The goal is ambitious, but important, namely to guarantee a 100% Italian supply chain. According to Donelli, the problem is also communicative, since practically no one knows that hunting is a regulated discipline, as well as a nature control tool. Finally, the curator of the project underlined how poachers are the shame of the category, one of the reasons why it is difficult to talk about game in Italy. The new restaurant will have the task of informing people before condemning the hunt without appeal.
