New partnership
After the success of the first edition, this year too Franchi Food Academy will be a partner of the contest "The Wood on the Table". A very important occasion for meeting, training, but above all fun for the students of the Hotel Institutes of the Marches, who will try their hand at cooking creative and original recipes based on game meat supplied by Urca Marche.
Tasty and original recipes
Through a cooking class, Roberto Dormicchi will explain how game meat is an extremely sustainable and versatile resource. Taste, originality, technique: the game recipes proposed in the last edition had to meet various requirements. The finalists cooked their dishes, under the scrutiny of the judges, who are very attentive to the preparation of the recipes.
Last year's winner
The absolute winner was Matteo Codignoli from the G. Celli Hotel Institute of Piobbico with the dish “Cappelletti with wild boar with Casciotta d'Urbino DOP fondue, Acqualagna black truffle and Cantiano black cherries”. Precisely this recipe, as the winner of the contest, will be part of the third volume of Franchi Food Academy game recipes, available in Italian bookstores at the beginning of 2023.
