Ortolani on croutons on the spit
Preparation 30 min, cooking 40 min, medium difficulty
12 greengrocers, 12 toasted bread, 50 g of butter, salt and pepper
Clean the gardeners by plucking them gently, passing them over the flame and removing the head and legs. Make a small cut on the top of the chest, near the neck, and remove the entrails. Now wash the birds, dry them and rub them with salt and pepper.
Put them on the spit and put them to cooking. Season them with 30 g of melted butter that will collect in the dripping pan and with which you will have to continue to wet the gardeners to keep them soft and fragrant.
The birds will be ready after about 40 minutes, when they have lost their fat and begin to "foam".
Brown the croutons in the remaining butter and place a greengrocer on each one. Serve sprinkled with the grease from the dripping pan.
