Roe deer with juniper
Preparation 20min, cooking 6-7min, minimum difficulty.
4 venison thigh chops of 200 g each. For the marinade: 2 tablespoons of juniper berries, 1 tablespoon of chives, 4 tablespoons of flavored apple cider vinegar, 3 tablespoons of extra virgin olive oil, salt.
Place the cutlets side by side in a bowl, sprinkle them with the juniper berries and chives, wet them with the oil and vinegar, add salt and marinate for 12 hours, turning them every now and then.
After the time has elapsed, strain the marinade, pound the berries in a mortar and spread them over the ribs.
Cook the ribs on the grill for 6-7 minutes on each side, brushing them with the marinade. Serve them hot immediately.
