A real credit to Roma: i spaghetti carbonara they are a popular first course that has now become famous throughout Italy. Thanks to Franchi Food Academy you can prepare a version based on game, with a strong and simple taste, capable of satisfying any cooking enthusiast. Here are the ingredients:
450 gr wild boar bacon
450 gr spaghetti
75 gr grated Parmesan plus more for finishing
75 gr grated pecorino cheese
6 gr broken black pepper
240 ml reserved pasta water
1 whole egg
3 yolks
1 small chopped shallot
2 sliced green onions
2 minced garlic cloves
salt to taste
These are the steps of the preparazione:
- Cut the wild boar bacon into 1-2 cm cubes and sauté it in a pan over high heat. Cook until the edges turn golden, but not completely crunchy.
- Add the shallot and garlic and sauté for another 2 'and turn off. Cook the spaghetti in boiling salted water, they must remain very al dente. Preserve 240 ml of the cooking water.
- Mix the egg and yolks with a pinch of salt, pepper and half of the cheese.
- Add the cooking water to the pasta in a saucepan and continue cooking over low heat. When the ⅔ water has evaporated, turn off the heat and add the beaten egg, stir or sauté with the bacon.
- Add the rest of the cheese and continue mixing.
- Spread on plates, grate more Parmesan and garnish with sliced green onions.
