For this reason, thanks to the fruitful collaboration with the Veterinary Department of the ATS of Brescia in the months of November and December specific training courses were organized, issuing the required health certificate. It will be possible for the Trained Hunters to bring the carcasses of the ungulates killed for hunting to this Game Meat Processing Center; here the hunter can sell the carcass or ask for it to be sectioned after maturation with the return in specific anatomical cuts, vacuum-packed, which guarantee quality and shelf life of the fresh product. All this, as required by the health legislation, will be under official veterinary control in order to guarantee the maximum healthiness of the meat, which is why the carcasses must be accompanied by the corata.
It will also be possible to buy hunted game meat from the adjoining butcher's shop, depending on availability, allowing all citizens to access this resource at kilometer and zero impact. To access the facility, the hunter must have the Format Hunter certificate and the documentation required by health regulations with him.
