Just this evening, Tuesday 30 January 2018, the Headquarters of the Clusone Mountain Community (province of Bergamo) will host the third and last course for trained hunters which is part of the project "Wild and Good". The initiative is supported by the provincial Federcaccia and the first two cycles of lessons, which were held in the last months of October and November, were a great success. Particularly, the interest shown by the hunters was very high, given that the topics covered are captivating.
In fact, "Selvatici e Buoni" is aimed at better understanding how to treat big game meats. The recognition and enhancement of these products, in full compliance with the law currently in force, can only depend on a new product culture. The latter must start with the hunter and then reach the consumer table and catering in general. The course has so far registered the participation of more than 40 hunters, but requests are also numerous from other neighboring provinces.
These are 5 lessons in which the details of the Regional Resolution number 2612 of 2014 are illustrated. A special text, created just for the occasion, allows you to deepen the issues in the best possible way. The conclusion will come next 8 February with a practical test at the “Selva di Gelso” restaurant in Clusone.
