“I believe that this text of the law shared with Massardi is fundamental to allow cooking in restaurants and festivals, to enhance and preserve the spread of game-based dishes as a gastronomic heritage of Lombardy.
Since 2014, however, the current rules prohibit the trade in feathered game and for commercial purposes thus excluding the possibility of restaurants, markets, fairs, festivals to offer numerous traditional dishes.
In the Bergamo area, for example, polenta goes well with game dishes ”, continues Galizzi. “A typical dish is polenta with small birds, now replaced by oselì scapacc where, instead of small birds, roasted meat rolls are used, stuffed with a slice of lard and sage. But the historic dish is obviously the one with game ".
"The lack of knowledge of history, culture and tradition combined with a false environmentalism" - concludes Galizzi - is inexplicable but above all harmful to the territories but Lombardy must react strongly. "
