Il cervo is an animal that lives exclusively in boschi. Her meat is a valid one alternative to that bovine. Its flavorful meats have nutritional values suitable for healthy diets and natural. So why not combine it with another one product of the forest: blueberry? The fruit flowering in August is known for its antioxidant properties which combine perfectly with the characteristics of the deer. Let's read the ingredients and the procedure.
Ingredients:
venison fillet 9 slices
Bolognese brine to taste
oil
blueberries 250g
Preparation:
Put the fillet in water for one night in order to remove the typical wild flavor of the meat. Cut into slices that are not too thick and dry the excess blood. Heat theextra virgin olive oil in a pan and arrange the fillet slices. After browning it on both sides, add the Bolognese brine.
While the meat continues cooking, prepare the cranberry sauce. In a non-stick pan, cook the blueberries, mashing some with a fork. Once the sauce will have caramelized remove it from the heat. Meanwhile the slices will have come cooking. Remove them from the pan and arrange on a plate with some salad leaves. Add the cranberry sauce and serve.
