The Bergamo headquarters of Italian Alpine Club hosted a preparatory meeting for the presentation of the "Wild and Good" project by 'sUniversity of Gastronomic Sciences of Pollenzo. The initiative is taking place in collaboration with the Veterinary Department of the University of Milan and the Italian Society of Preventive Veterinary Medicine. The meeting, strongly desired by UNA Foundation (Man Nature Environment), served to carry out the project in the province of Bergamo, the first area in which to test the creation of the traceable game supply chain.
In this territory there are more than 13 thousand ungulates including deer, chamois, roe deer and wild boar, so the experiment is significant. Maurizio Zipponi, number one of the UNA scientific committee, explained all the aims of the project, recalling how much the game is underestimated and undervalued, also from an economic and employment point of view.
Silvio Barbero, vice president of the University of Gastronomic Sciences, underlined the important ones organoleptic qualities of this meat and the need to avoid food fraud. Antonio Sorice, president of SIMeVeP, Paolo Lanfranchi, Luca Pellicioli and Roberto Viganò also took part. After this first day they will be there other technical meetings to get to the heart of the operational phase.
