The project "Wild and Good: a food chain to be enhanced"Is about to go live. In fact, in November four restaurants in the province of Bergamo will organize as many evenings to promote the game based recipes. It will begin on 8 November with the Osteria "Al Gigianca" of Bergamo, then continuing the following week with the Trattoria Gastronomica "La Selva" of Clusone.
On November 22 it will be the turn of the restaurant "Bellavista" di Riva di Solto, while the final appointment will be that of November 30th in Vilminore di Scalve, more precisely at the Restaurant "Sins of gluttony". Each evening will include tastings of meat from the Orobic area and become an integral part of the certified supply chain thanks to the Game Processing Center.
During the first evening the theme will be "The deer in the city", during the second, space will be given to "The fallow deer in the forest", then continuing with "The wild boar at the lake" e "The chamois in the valley". Each dish will be revisited in a contemporary key by the chefs, in order to present on the table a product of excellent quality from a nutritional and health point of view. There will also be local products to effectively enhance local cheeses and wines. The price will be 35 euros per person, with dinner starting at 20pm.
