For 1 kg of meat: 1 bottle of dry red wine, 2 sprigs of rosemary, ½ glass of olive oil, 1 onion, 1 carrot, 1 celery stalk, 1 clove of garlic, 1 glass of brandy, 800 g of chopped tomatoes, 1 kg of potatoes, meat broth and salt to taste
It takes 48 hours of marinating and 3 hours of preparation. Take the meat cut into pieces, soak it in red wine with the perfumes and put it in the refrigerator for 48 hours. After the time has elapsed, drain the pieces of meat and salt them, then put them in a pan with the olive oil and the drained and chopped aromas and cook in a covered pan; abundant liquid will form in which the meat will cook together with the vegetables. After about an hour, uncover and evaporate the liquid until only the oil remains. Sauté for ten minutes, stirring constantly, then add a glass of dry red wine and a glass of brandy.
Leave the pan uncovered and stir continuously until the smell of the wine has disappeared, then add the tomato pulp until the meat is completely covered. Simmer slowly for 15 minutes then add the potatoes cut into chunks in an amount equal to the weight of the meat before starting to cook it. Cover and continue to cook over moderate heat. When the potatoes are cooked, the stew will be ready to serve. If during cooking it tends to dry out too much, add meat broth.
