It is with pleasure that we present a new editorial collaboration with the restaurant Brado - beer and rural cuisine, the "urban hut" in Rome conceived and managed by the brothers Manuel, Christian and Mirko Catania, with the helm of the kitchen entrusted tochief executive Simone Cacciotti who, on a monthly basis, will propose delicious recipes with game meat as protagonist.
Brado's gastronomic proposal is based on the ethical assumption of presenting meat exclusively raised in a non-intensive way, in the wild, precisely in order not to deny the founders' founding values: passion, quality, ethics and sustainability. This principle starts from respect for the forest, for animals, for their life and for the natural cycles of the seasons, and ends in the dishes, guaranteeing a unique flavor with excellent nutritional values.
Brado's new gastronomic course is expressed by an identity menu linked to the seasonality of foods, in which there is space for dishes such as tartare of seasonal game, wild boar bomba alla cacciatora, wild suckling pig, but also seared amberjack, trombolotto reduction, smoked red turnip caviar with apple wood, chervil and glasswort salad and wild salmon sockeye raw and cooked, smoked with conifer wood, wild herbs and cream of lemongrass, because at Brado fish also plays an important role in the menu, always respecting the declared values: fish products not coming from intensive farming but exclusively hooked.
Dishes made with careful attention to raw materials, of certified origin, seeking the natural elements of the forest to be enhanced with simplicity, and enhanced by the skill and passion of the Head Simon Cacciotti.
Further more of the local Brado is appreciated for the great interest that the three brothers share in craft beer and, in their restaurant, they wanted to install one of the best systems in the city, which allows you to serve beers produced by micro craft breweries, obtaining different combinations to enhance the flavors of the dishes proposed. Also worth mentioning is the extensive wine list, with selected labels from small organic farms, which testify to the bond and respect for the territory and the over 200 references between Whiskey, Gin, Grappas, Mezcal e Rum which contribute to making the offer extremely rich beverage by Brado.
