Hunting in the Kitchen at Game Fair Italy: game meat is a good, healthy and nutritious alternative, this is the theme of the presentation evening at Città del Gusto del Gambero Rosso.
Game Fair Italia for the next edition focuses on game, developing a specific information campaign, as well as a culture of outdoor life. This is the only example of an Italian "country festival", now in its 24th edition the one that will take place from 31 May to 2 June 2014 in the now traditional location of Tarquinia (VT), for two years it has been managed by the company of the same name jointly owned by National Hunting and Nature Committee (CNCN) and Vicenza Fair. To present the news of the 2014 edition and renew the meeting with the world of information and institutions, Game Fair Italia has therefore chosen an important focus and collaboration, focusing attention on game together with Gambero Rosso. From this desire was born the evening of May 15 last, introduced by the president of Game Fair Italia, and of CNCN, Giovanni Ghini, together with the president of Fiera di Vicenza, Matteo Marzotto. The president of Gambero Rosso, Paolo Cuccia, did the honors, together with Marco Sabellico, who also supervised the pairing of the wines with the products of the Gussalli Beretta farms. Also present was Michele Carruba, professor of Pharmacology at the University of Milan, who clarified why game meat has undoubted advantages over farmed meat, not least that of being safer.
In fact, Carruba explained, "Compared to meat from farmed animals, the advantages of game meat are evident and derive largely from the feeding of the animals themselves, in the first case forced and oriented towards the growth of the edible mass while the game is it feeds only on what it finds in nature. Furthermore, the wildlife moves continuously free in the environment, as opposed to that from breeding forced into confined spaces and lacking in physical activity. All of this makes game a low-fat meat. Furthermore, those present are for the most part polyunsaturated and therefore of the less harmful type ". To animate the evening there is also a show-cooking created by chef Bruno Barbieri who then signed a menu completely based on game as well as many other great chefs are creating game dishes in their multi-starred restaurants.
These are leaner meats, with high values in proteins and mineral salts, low fat content, valuable organoleptic qualities, with a sustainable and ethically more acceptable origin than intensive farming. Game as a healthy alternative for food is becoming one of the important themes of the Italian hunting and zootechnical world. Examples such as that of Trentino Alto Adige, the first to study a correct and certified supply chain and to put it into practice, are the basis of the movements that are emerging in other regions. In Tuscany, for example, a movement has formed that aims to make game a conscious and positive choice in catering, combining the efforts of the hunting and rural worlds for the preservation of traditions and flavors.
