Duck with mushrooms

1 duck of 1 kg, 600 g of fresh mushrooms, 1 onion, 1 carrot, 1 stick of celery, 1 clove of garlic, 2 bay leaves, 2 tablespoons of chopped parsley, 2 tablespoons of extra virgin olive oil, salt
Put the chopped vegetables and bay leaves in a large pot filled with salted water and bring to a boil.
Clean the duck, wash it and put it to boil in the pot with the boiling water and the vegetables, with a lid on for about an hour and a half.
Meanwhile, heat the oil in a large pan, brown the garlic clove and cook the mushrooms, washed and cut into pieces, for about 15 minutes. When they are ready, remove them from the heat and sprinkle them with chopped parsley.
When cooked, remove the duck from the broth, cut it into pieces and serve with the mushroom garnish.
