Roast wild boar ham roll, creamed porcini and blueberry risotto with diced wild boar mortadella with truffles. These are just some delicacies present in the rich and innovative menu that the lucky participants in the cooking show “Wild and good”, staged last night in Piazza Dante in Grosseto during the preview of Game Fair. The event, organized by UNA Onlus Foundation, starring the chef from Brescia Roberto Abbadati and Fred, historical cartoonist of Porta a Porta and Cortina InConTra. The "strange couple" entertained the public in the square for over an hour and a half, telling in an original and amusing way the nutritional and taste qualities of wild meat, in particular that of the wild boar. The preparation of the courses by the chef Abbadati, in fact, was accompanied by Fred's never banal cartoons dedicated to the satirical story of the main themes related to food, without neglecting references to current affairs and politics.
The show cooking "Wild and good”Was born from the project of the same name promoted by the UNA Onlus Foundation and curated by the University of Gastronomic Sciences of Pollenzo, in collaboration with the Department of Veterinary Medicine of the University of Milan and the Italian Society of Veterinary Medicine. The project, which aims to enhance wild meat by inserting it in a virtuous supply chain that starts from the forest to get to the table, has already achieved important results in the Bergamo area.

For these reasons we particularly care about our Wild and good project, already appreciated in various Italian territories - concluded Perrotti - which we will present in a few weeks at the prestigious Salone del Gusto in Turin.
