The path "Wild and Good" continues with the enhancement of the food chain: this time it was decided to give an important opportunity to restaurateurs, who will be able to learn more about big game meats. We are talking about the workshop organized in Bergamo, to be precise at the headquarters ofASCOM, For Monday 12 March 2018. From 15 to 18 several speakers will intervene, including the number one of Federcaccia BergamoLorenzo Bertacchi.
They also guaranteed their presence Maurizio Zipponi, president of the scientific committee of the UNA Foundation, Antonio Sorice, president of the Italian Society of Italian Preventive Medicine, Paolo Lanfranchi of the University of Milan. Initially, Professor Barbero of the University of Gastronomic Sciences of Pollenzo will speak. His speech will concern the history, culture and traditions linked to the consumption of game in the Alpine area.
It will then be the turn of Roberto Viganò (Studio Associato AlpVet), who will deal with the nutritional aspects and the enhancement of meat quality. Another speech will be that of Eugenio Demartini, researcher of the VESPA Department of the University of Milan, called to discuss marketing and economic aspects that have to do with game. Finally, Luca Pellicioli (Studio AlpVet) will moderate the final debate and confrontation.
