62a edition of the Sagra della Porchetta in Poggio Bustone (RI), the story of a flavor; 62 years of roast porchetta, on 6 and 7 October 2012.
62 years of celebrations for roast porchetta. More than half a century. Yet everyone is still eagerly awaiting the time to celebrate and eat the robust course. So from 6 to 7 October 2012 Poggio Bustone serves porchetta which has been the typical dish of the Rieti town since 1950.
Legend has it that in ancient times Moretto, a Poiano butcher, as the inhabitants of Poggio Bustone are called, made a trip to the east. During his stay he witnessed the fire of a shed where some pigs were roasted. The meat in contact with the aromatic herbs present on the ground had assumed a tasty and fragrant aroma. Moretto repeated the experiment successfully once he returned to the country. From this episode, the buzzards give birth to the origins of Poggio Bustone's porchetta.
Indoor stands and tables will be set up in the town's public park, but there are numerous spaces for those wishing to eat a very popular porchetta sandwich sitting in the green areas offered by this small medieval center, on the slopes of Monte Rosato.
The master used to say that the best part of the porchetta was the fat “collareccia”, as soon as you start cutting. Young people usually prefer the leanest cut (ham) they must pay attention to the line.
The "cianchi", the "recchie" and the "fegatelli" are for superfine customers because they are able to fully appreciate the strong taste and at the same time the unmistakable flavor. Whoever is therefore convinced that this dish is an excellence only of the Castelli Romani, is wrong! The porchetta of Poggio Bustone is in fact one of the most significant local gastronomic delicacies of the Rieti area.
Balanced flavor, both in weight and in distribution, with ground pepper, garlic, rosemary and salt. Fennel has never entered the ingredients unlike what happens elsewhere. Unevenly distributed oven heat. These are some of the elements that make this dish particularly popular and typical throughout Italy.
From 6 to 7 October all to eat the Porchetta buzzard on the "balcony" of the Conca Reatina so the town of Poggio Bustone in the province of Rieti is known for its position. Porchetta will not be alone, in fact, the tasty menu includes mezze manicures with tomato sauce and bacon, Leonessa potatoes and Morro Reatino pizzola.
For those who love the "outside the city" not only for gastronomic reasons there are numerous routes that can be done as well as the Camino di Francesco. During the party there will be a review of accordions, stornellatori and a band to spend a weekend in the name of lightness and good food until late in the evening.
