"Game meat, like that of naturally bred cattle, is less carcinogenic than that coming from intensive farming, because it possesses qualitatively high nutritional properties, starting from a lower percentage of intermolecular fat and the absence of antibiotics in it" .
This is what prof. Silvio Barbero, vice president of the University of Gastronomic Sciences of Pollenzo, regarding the alarm launched by the WHO International Agency for Research on Cancer, which has included processed meat among the most carcinogenic substances (like smoking and benzene), and red meat among those "probably carcinogenic".
“The contents of the WHO research are not new - continues Barbero - the real problem consists in the variety of daily nutrition and moderation in eating certain foods, including meat. The red ones can, due to their structure, induce carcinogenic degenerative processes, but the risks are reduced based on the quality and sustainability of the farming methods. Certainly, in fact, there are certain production methods, in particular intensive farming, which increase the risk factors. Incorrect cooking methods, especially those that burn meat, also contribute to the production of carcinogenic processes ".
“A further decisive element - concludes Barbero - is represented by traceability, which is essential to increase the consumer's awareness of the origin of the meat”. The traceability of the origin of game meat is at the center of the “Wild and good” project by the University of Gastronomic Sciences of Pollenzo, in collaboration with the Veterinary Department of the University of Milan and the Italian Society of Preventive Veterinary.
The project - one of the five fielded by UNA (man, nature and environment), the new environmental chain built to find a new balance between man and the environment, based on legality and capable of generating new opportunities for the economy and employment - aims to make the issues of traceability and food safety central to guarantee transparency and legality in this sector, and to enhance game-based products, also from an economic point of view.
These issues will also be at the center on Thursday 29 October at Expo Milano 2015 during the "Italy-Environment: towards virtuosity" event in which the Undersecretary of the Ministry of the Environment Barbara Degani will participate, as well as representatives of the environmental, scientific and hunting world of all over Europe.
