“A Fest 'du Puorc” is held in Puglianello, in the province of Benevento, now in its 10th Edition, on 9, 10, 11 and 12 February 2012.
The Centro Studi Puglianello, in collaboration with the Liverini company of Telese Terme and the patronage of the Chamber of Commerce of Benevento, the Province of Benevento and the Municipality of Puglianello, presents the tenth edition of 'A fest' du Puorc '(the of the pig).
The event, which for some years has received increasing attention from many food and wine lovers, intends to enhance the authentic traditions of our territory. 'A fest' du puorc '(the moment in which the pig, raised within the peasant family is killed) represents food certainty, the pantry of tomorrow, the joy of being in peasant culture.
The event, which is held in the historic center of Puglianello in the week from 6 to 12 February 2012, now in its X Edition, presents a program full of interesting news: Monday 6 February during a food and wine afternoon, in collaboration with the restaurant 'Il Foro dei Baroni' and the pub "Historia", after the presentation of the event by the managers of the Centro Studi Puglianello and an in-depth study on the gastronomy of excellence on the part of authorities, experts and journalists, established chefs from Campania will present their dishes on the theme of the pig.
Students from the Nicola Sala Conservatory of Benevento will be present with musical performances on the theme of the party. On Thursday 9 February, in the tent set up for the reception, the animators of the Centro Studi, waiting for the party, will present to the general public the products of the various agri-food companies in the area with tastings and karaoke.
From Friday to Sunday three intense days of the actual party, where everything revolves around the gastronomy of the pig, promoting moments of collective joy: the whole community embraces itself in celebration, offering the many participants from the Campania region and neighboring regions the classic and genuine welcome of peasant culture.
The stands, cared for by the many volunteers of the Centro Studi Puglianello, will offer participants the tasting of the many traditional peasant dishes: tagliatelle with tracchie and porcini mushrooms, cavatelli with tracchie, pats and chickpeas, tagliolini with beans and pork rind, orecchiette with sausages and broccoli, meat and peppers, grilled pork, married soup, sautéed with potatoes, polenta with liver and sausage, lemon foot , tortano with cicole and many other delights. All accompanied by wines from the Telesina valley and lots of good music.
The festival, which has now become an extraordinary reality, occupies a more than relevant position in the regional panorama in the food and wine and cultural tourism sector., offering the Campania region and not only the opportunity to relive the magic of a festive moment, where the peasant culture made of lights and shadows stands as the protagonist, but always authentic and capable of interpreting the excellence of the times.

The food stands will be open for both lunch (12.30 - 15.30) and dinner (starting at 18.30) with musical entertainment.
The peculiarity of 'A fest' du Puorc 'lies in the fact that through these moments of celebration we intend above all to recover the root of the animal raised in the family: the raw material used is not the daughter of industrial farming, but a domestic product to recreate the best dishes of the peasant gastronomic tradition. Pig breeding is, in fact, one of the rare customs that the peasant world continues to jealously guard, which resists time despite the fact that rural life has undergone profound changes. In Puglianello, by genuinely raising the pigs used for the gastronomic offer of this event, we want to give strength to a tradition, which today is increasingly appreciated thanks to the affirmation of the culture of taste, and which travels hand in hand with the an increasingly widespread and contagious fight against homologation.
