As part of the Palio di Buti (PI), the initiative "I Vecchi Piatti Butesi", an itinerant dinner among the competing districts, Saturday 12 January 2013.
The Palio di Buti is staged between tripe and carriages. Minus three, minus two, go! The Mossiere thus began the Palio, that of Buti in the province of Pisa, one of the oldest in Italy. The first dates back to 1800… and something. There are seven Contradas to compete, each of them binds its identity to one of the seven churches of Buti: Ascension, La Croce, Pievania, San Francesco, San Michele, San Nicolao and San Rocco. This is what tradition once wanted. Between sacred and profane, the Palio attracts thousands of spectators every year, fascinated, of course, by the dispute between jockeys riding splendid horses that were once taken from the fields, but today they are professional runners, as well as those who ride them. But the Palio fascinates, above all for the breath of folklore that is breathed every year.
At the horse race "shoulder" on January 12 the Itinerant Dinner among the districts of the country. It is a dinner "on the go" which includes the tasting of dishes belonging to the peasant gastronomic tradition of Buti in old stables, oil mills and theaters. But the real peculiarity of the day of celebration is not only the lavish aspect, but the way in which each visitor can move. Splendid carriages, nineteenth-century style, will transport visitors from one point of the town to another. Those who want to go on foot and enjoy the cobblestone alleys of the town will be able to do so.
The part of the village that hosts the dinner is closed to traffic, therefore totally family-friendly. To get to the village, since the same will be largely closed, a shuttle bus service will be set up, in case of rain a 30-seater carriage fully covered and pulled by horses will be equipped to bring people to the various locations.
The protagonist of the Itinerant Dinner will be the tripe, cooked to order, with the recipe provided by the peasant tradition, linked to poor dishes, but rich in flavors, made with simple ingredients: cabbage, potatoes, stale bread, vegetables and pork. The tripe, strictly "butese", queen of the table, will be made of beef cooked with sausages, carrots, beans and tomato, accompanied by red wine and once also by brandy ... but the latter, as tradition wanted, was given only to those who did not have to ride a horse.
Participating in the Itinerant Dinner is a real experience, not linked only to the gastronomic moment, but it is an experience that will allow the visitor to take a step back in time by two centuries. Along the narrow streets of Buti, traveled on foot or by carriage, it will be possible to admire the old tradesmen such as the farrier intent on shoeing horses.
Many know the shows, which can be attended for free: at the Francesco di Bartolo Theater there will be the representation "I Maggi Butesi, short songs of octaves", in Piazza della Chiesa the village tradition will be staged with the manufacture of irons and shoeing some horses. Finally, the Choral Santa Cecilia will perform in Piazza Matteotti. In every corner of Buti there will be intense performances by "street artists" and musical moments.
Those who arrive can choose to taste even one dish per location, eating the first course on one side and the second on the other. The central cash desk is in Piazza Garibaldi, where in addition to payment, a brochure will be delivered with possible tastings and shows present. In case you do not follow itineraries in itinere there are affiliated businesses where it is possible to have tastings other than those proposed or dinners with special menus.
