The Borlengo Festival in Guiglia, in the province of Modena, is back for its 43rd edition, from 4 to 19 May 2013. Borlengo is a typical dish whose origins are lost in the history and traditions of a rather restricted area of the Modenese Apennines. Simple in the recipe made up of a few essential elements, but elaborate and spectacular in its preparation. Borlengo is obtained by cooking a liquid glue (prepared with water, flour, eggs and salt) in a special pan called sole or ruola.
Once cooked, the Borlengo has the consistency of a very thin and crumbly pastry and is seasoned with cunza (a pesto of pancetta, lard, garlic and rosemary), a generous sprinkling of Parmiggiano Reggiano and then folded in four and served to be eaten. still very hot. In Guiglia, in May, the Borlengo Festival has been held for 43 years now, to feed and pass on the "culture of borlengo", a true gastronomic celebration of Borlengo, the ancient local indigenous flavor. In the context of the event, to pass on the tradition, the Borlengo International School will be organized, always full of participations.
