The third edition of "Wild and good at the table", gastronomic cultural initiative carried out as part of the actions of "Wild and good" project supported by the UNA Onlus Foundation and various partners including the provincial Federcaccia of Bergamo. During these months the project has made it possible to to let many people know and appreciate the fundamental role of the hunting world within the food chain process that can lead, even at the catering level, to appreciate the nutritional characteristics of big game meats.
At the "Blum" restaurant in Rovetta, Dimitri Acerbis and his staff were able to interpret and inaugurate the exhibition by proposing, among the various dishes of the evening that involved over 40 people, an interesting venison carpaccio with celery and rocket pesto, purple cabbage and shavings of formai de mut. The evening was attended by exponents of the Alpine hunting districts, Slow Food Orobic Valleys and various diners passionate about catering and local products such as game meat.
The events of the review will continue on Wednesday 13 February at the Hosteria del Vapore in Chiuduno. Saturday 23 February will be the turn of the Chalet Engadina in Vilminore, while the conclusion will be that of Saturday 2 March at Cascina Lorenzo in Costa Volpino.
