La first edition of the competition organized by Provincial Federcaccia of Bergamo and dedicated to game cooking ended in the best way. The initiative has left its mark and the students of the"Guido Galli" Professional Institute, who participated in the event entitled "Dishes ... wild, the boar". Ten boys from the first classes challenged each other on the subject and interpreted it from a gastronomic point of view.
The dishes were tasted and examined by one qualified jury: during the final evening, then, everyone received the certificate of participation. The first prize went to pappardelle with wild boar pulp by Elena Grieco and Alessia Bonetti: Riccardo Rota and Caterina La Forgia with their chili with wild boar meat, a truly original recipe, are just one point away.
The other preparations were an Italian-style sausage taco, nodino di crispy wild boar with almonds, pistachio, saffron panna cotta, red Martinengo potatoes and confit tomatoes and Mediterranean wild boar pappardelle. Lorenzo Bertacchi, number one of Federcaccia Bergamo and member of the jury, welcomed with satisfaction the outcome of the event, successful to say the least. The provincial president noted the participation of young chefs, enthusiastic and capable of inspire confidence for the future.
