The provincial section of Bergamo of Italian Federation of Hunting , Vittorio Cerea Academy presented the first edition of the competition "Dishes ... wild". This is an event dedicated to the students of this academy and which will involve game hunted and coming from certified supply chain. The first appointment will see the wild boar as the absolute protagonist, with the boys of this Hotel Institute who will be called to prepare game dishes that enhance the excellence of the Bergamasco, both from a gastronomic and technical point of view.
The didactic moment is very important and there will be in-depth studies of fauna and anatomy opportunities for what concerns the culinary field. Contest participants will have to prepare five different cuts of meat, presenting the dish to a selected jury and pairing it with a wine from this area of Lombardy. Then a gala dinner will be organized in which the same students will be engaged in the various room services.
The wild boar from Bergamo will embellish the first edition of the competition, but in the province the faunal heritage is really rich and varied. The small birds of passage, the tetranoids, the other ungulates, the hares, the pheasants, the partridges and the woodcock do not let that the embarrassment of choice. The enhancement of this cuisine and of the heritage of exceptional organoleptic qualities will further enhance the unique characteristics and qualities of the local products.
