The Associations Federcaccia Marche, Urca Marche, Coldiretti, Fondazione Una and Franchi Food Academy, with the patronage of the Marche Region and the participation of La Sapienza University of Rome, Studio Alpvet and IZSUM Umbria - Marche, coordinated by Prof Loris Sartini, have set up a gastronomic competition, called "The Wood on the Table", which involved the Hotel Institutes of the Marche, with the aim of launching specialized initiatives in the gastronomic sector, in order to promote innovative methods of information, tasting and processing of Game Meat, in the various territorial realities, so as to become an important resource at a social and economic level on condition that a correct and qualified culture of their use is created in full compliance with food hygiene and the highest organoleptic qualities.
The recipes had to have a common denominator: wild boar meat, the latter offered by Urca, the managing body of the Game Collection and Processing Center of the ATC Macerata2, located in Serrapetrona (MC), Caccamo locality. Following a selection of the best recipes presented by the various institutes, the final was held on 12 April at the Einstein Nebbia Hotel Institute in Loreto, during which the 10 competitors, previously selected, they prepared the dishes to be tasted. The jury composed of: Merola Michele (Federcaccia Marche), Ugo Bellesi (Delegate of the Academy of Italian Cuisine of the Province of Macerata), Marchetti Francesco (Urca Macerata), Iris Rossi (Franchi Food Academy), Renato Venturi (Marche Region), proclaimed the Contest winners, while declaring a satisfactory execution of the dishes, by all the students in the competition.
The first classified was Matteo Codignoli, of the G. Celli Hospitality Institute, of Piobbico, with the dish: Wild boar cappelletti with Casciotta d'Urbino PDO fondue, black truffle from Acqualagna and Amarene di Cantiano; The runner-up was Sarah Calabrese, from the Einstein Nebbia Hospitality Institute in Loreto with the dish: Gnocchi stuffed with wild boar; Third place was Nicolas Franco, from the Panzini Hotel Institute in Senigallia, with the dish: The Wild Boar in a Bite.
The award ceremony took place at the end of the tasting activities, and saw the intervention of various authorities, such as, the Vice President of the Marche Region Mirco Carloni, in video link, who congratulated on the success of the event, the Director of the Einstein Nebbia Institute Prof. Francesco Lucantoni who thanked those present and pupils competing and the Regional Councilor of the Brothers of Italy Marco Ausili, who delivered the prizes offered by Federcaccia Marche, Fondazione UNA and Franchi to the first 3 classified.
