The gastronomic review will be back in a few days "Hunt in the Kitchen" which will take place in the province of Bergamo and it will last a whole month. 25 24 from February to March this event will have wild meats as absolute protagonists. The event is promoted, as usual, by theASCOM Bergamo - Restaurateurs Group together withANUUMigrators. The goal to be achieved is to give the right value and recover the hunting gastronomic tradition.
The restaurants, taverns and trattorias of the Bergamo area will be 15, with an offer of all respect to the point that every palate will be satisfied by the game dishes. The 2019 edition will be number 17, confirming the fact that we are talking about a consolidated appointment appreciated by the public and by the restaurateurs themselves. The game will be cooked with craftsmanship and innovation in Bergamo, Trescore Balneario, Urgnano, Branzi, Spinone al Lago, Ponteranica, Clusone, Albino, Gromo, Alzano Lombardo, Viadanica, Zogno and Mapello. What does the menu provide instead to immediately start licking your mustaches?
The dishes are really succulent. We can mention the roe deer tortelli in taleggio cheese cream with flaked almonds and drops of its base, the venison fillet in breaded dried fruit, but also the Venison chop with juniper with chestnut mousse and egg tagliatelle (strictly fresh pasta) with jugged hare. No less tasty will be the venison with aromatic herbs and chestnuts with polenta taragna and the strips of fresh pasta with thyme with pheasant ragout.
This is an excellent initiative, in which I have participated several times, in Como there was a well-known hotel school that through its students provided for the preparation of the dishes.
