Silvio Barbero, vice president ofUniversity of Gastronomic Sciences of Pollenzo (province of Cuneo), has issued some very interesting declarations on the hunting activity. The university was conceived by Carlo Petrini, founder of the Slow Food presidium. According to Barbero, hunting that is able to dialogue and confront society and that respect the environment is a guarantee of sustainability e economic value, since it allows you to rediscover the rurality.
Hunters are therefore a precious resource capable of producing a fundamental change of culture for our country. This is why the vice president greatly appreciated the control room of the hunting world and the manifesto published by the associations that are part of it. In the same manifesto appears the word "rurality" and for Barbero it is an important choice, also because it means respect for the earth and more sustainable behavior. The hunters were then asked to behave like primary producers of a strategic resource such as bushmeat, characterized by unique organoleptic properties and rich in economic potential.
Barbero also spoke about the public perception of hunting. According to him, the animal rights and vegan vision is based solely on considering hunters as people who satisfy their personal interest, but it is not so. To get out of this scheme it is therefore necessary to further collaborate on environmental sustainability, as well evidenced by the "Wild and Good" project of which the University of Pollenzo was curator.
