La Graffignano Wild Boar Festival, a town in the province of Viterbo (not far from the border between Lazio and Umbria), is about to turn 15 and will reach this important milestone by 17 20 to August next. It is about a much awaited appointment, capable of attracting the participation of many visitors every year, given that the culinary proposal is of the first level.
The organization was taken care of by San Martino team to promote and enhance the tradition of wild boar hunting: there are many fans of this sampling in this part of Lazio and it is for this reason that the festival is able to improve from time to time. The ancient recipes of Graffignano they were followed to the letter, with the beltlai themselves and their families engaged in the preparation.
The menu includes, among other dishes, pappardelle with wild boar ragout, wild boar and truffle gnocchi, wild boar stew with beans, with sour and sauce, sausages and pork chops and even grilled chicken. The event will be held in San Sebastiano, to be precise in an area with 1500 places to sit in a well-equipped park. Finally, there will be group dances and live music.
