For fourteen years Graffignano, Lazio town of about 2300 inhabitants in the province of Viterbo, hosts a characteristic wild boar festival. The 2016 edition is getting closer and closer and will take place between 18 and 21 August next: the organization is, as usual, that ofCinghialai Association San Martino Team and expectations are very high as regards the total number of visitors. The group of local hunters aims with this event to honor the hunting tradition of the taking of the ungulate, much appreciated in this area, and to make known in more depth the goodness of its meat.
The success of these years is due to several factors. In particular, the cooked dishes are genuine and follow the letter le ancient recipes of Graffignano. Among the specialties that can be tasted in just over a week we find the pappardelle with wild boar ragu, gnocchi with wild boar and truffle, wild boar stew with beans, wild boar with sour sauce and sauce and finally sausages and pork chops.
The chosen location is very wide and is located in the locality San Sebastiano: the park is equipped with a well-stocked car park, an area for children and a market. In addition, every evening there will be group dances and live music.
