"From the Forest to the Kitchen". The Academy of Environment Forests and Fauna of Trentino Alto Adige, the Council of the Hunting District of Ledro (province of Trento) and the Chalet Rifugio al Faggio organized the fourth edition of these important four evenings that will be dedicated to game meat. Tuesday 29th November and then 1st, 6th and 13th December important topics such as the removal, the treatment of the remains, the hygiene, the quality and the gastronomic preparation of these meats will be explored.
There will be four extremely interesting events to understand how to treat hunted animals in the most correct way, starting from the hunting site and reaching the freezer and final consumption. The first two evenings will be dedicated to veterinary aspects. Tuesday 29 November (20:30), the Pieve di Ledro Fire Brigade Barracks will host the evening on "Hygiene and quality of hunted game", by Dr. Sabrina Paternolli.
The same location will host Dr. Luca Pirovini and the debate on effects of the bullet on the affected animal. It will continue on Tuesday 6 December and Tuesday 13 December at the Chalet al Faggio with, respectively, a practical demonstration of meat treatment techniques (by Filippo Zecchini) and "Technique and imagination: game in the kitchen" (chef Paolo Santi will be present). Participation is free.
