Il Faunal Environmental Education Center (CEDAF) has promoted a very interesting initiative. The details were disclosed thanks to an interview given by the president Massimo Fabbri to the newspaper The nation: it was in fact decided to promote specific and targeted courses for making game even safer, thanks in particular to a supply chain that respects fixed rules at all times, from killing the animal to the consumer's plate. We are talking about a food that is increasingly appreciated and not only by hunters. Wild boar meat, but also roe deer and other wild animals that are made the subject of hunting have conquered many restaurants, with ad hoc menus and nutritional contributions of all respect.
CEDAF is the training body to which the Confederation of Tuscan Hunters and is often the protagonist of very useful hunting courses. As explained by Fabbri, the one relating to game will allow to release a title that will be recognized at European and regional level as regards the marketing of the meat of ungulates (obviously those hunted on a regular basis). The lessons will focus mainly on diseases which can affect the game we are talking about, but also the treatment of meat.
Participants will therefore be able to adequately carry out a preliminary examination to prevent the zoonoses: this term indicates the infectious disease that can be transmitted from animals to humans. What does the study program specifically envisage? The course will feature an in-depth analysis of all abnormal behaviors and any changes in the pathologies that may be found in wild animals as a result of diseases or other elements. The teachings will also be used to manage the garment after killing, respecting the hygiene and sanitary standards, without forgetting the correct disposal of waste and parts of ungulates that cannot be eaten.
At this point another question spontaneously arises: to whom are the lessons of the Center based in Florence? Hunters are obviously the first subjects that come to mind, but they are not the only recipients of the program just described. Effectively, CEDAF has also decided to address gastronomy and pork-butchery enthusiasts, given that there are courses dedicated to these topics. The president concluded his interview by pointing out the difference between game and game: the latter is also subject to breeding and purchase (even on the web) and is subjected to a diet that conditions the taste and the presence of fat.
