Boar Sweet & Sour
Preparation 20min, cooking 1 hour and 50 min, medium difficulty
500 g of wild boar meat, 20 g of raisins, 15 g of dark chocolate, l5 g of pine nuts, 15 g of ham with the fat cut into a single slice, 10 g of candied fruit, 2-3 tablespoons of vinegar, 1 spoon of sugar, 1 onion, 1 carrot, 1 celery stick, 1 sprig of parsley, 1 spoonful of flour.
Prepare a mixture of onion, carrot, celery, parsley and ham, place in a pan with the meat and brown everything. When the meat is browned, add the flour and cook for about an hour and a half, adding hot water every now and then.
Mix the raisins in a bowl, i Pine nuts, i candied fruit, chocolate and sugar and season with vinegar, mixing well with a wooden spoon.
Season the meat with the freshly prepared ingredients and leave it on the fire for another ten minutes.
Let it rest for 24 hours, stirring occasionally; before serving, put the meat in the oven at 200 ° C for a few minutes, then slice it and place it on a serving dish with its sauce.
